Pineapple fried rice

Ingredients

1½ tbsp sunflower or vegetable oil

2 eggs , beaten

2 garlic cloves , crushed

small bunch of spring onions , chopped

1⁄2 tsp Chinese five-spice powder

400g cooked long-grain rice

85g frozen peas

2 tsp sesame oil

2 tbsp low-salt soy sauce

400g fresh pineapple , roughly chopped into chunks (about 1⁄2 medium pineapple)

Method

STEP 1

1 Heat 1 tbsp oil in a wok. Add the eggs, swirling them up the sides, to make a thin omelette. Once cooked through, roll the omelette onto a chopping board and cut into ribbons. 

STEP 2

Heat the remaining oil. Add the garlic, onions and five-spice. Stir-fry until sizzling, then add the rice (if using pouches, squeeze them first, to separate the grains), peas, sesame oil and soy. Cook over a high heat until the rice is hot, then stir through the pineapple and omelette ribbons.

Nutty chicken satay strips

Ingredients

2 tbsp chunky peanut butter (without palm oil or sugar)

1 garlic clove, finely grated

1 tsp Madras curry powder

few shakes soy sauce

2 tsp lime juice

2 skinless, chicken breast fillets (about 300g) cut into thick strips

about 10cm cucumber, cut into fingers

sweet chilli sauce, to serve

Method

STEP 1

Heat oven to 200C/180C fan/gas 4 and line a baking tray with non-stick paper.

STEP 2

Mix 2 tbsp chunky peanut butter with 1 finely grated garlic clove, 1 tsp Madras curry powder, a few shakes of soy sauce and 2 tsp lime juice in a bowl. Some nut butters are thicker than others, so if necessary, add a dash of boiling water to get a coating consistency.

STEP 3

Add 2 skinless chicken breast fillets, cut into strips, and mix well. Arrange on the baking sheet, spaced apart, and bake in the oven for 8-10 mins until cooked, but still juicy.

STEP 4

Eat warm with roughly 10cm cucumber, cut into fingers, and sweet chilli sauce. Alternatively, leave to cool and keep in the fridge for up to 2 days.

Steak & broccoli protein pots

Ingredients

250g pack wholegrain rice mix with seaweed (Merchant Gourmet)

2 tbsp chopped sushi ginger

4 spring onions , the green part finely chopped, the white halved lengthways and cut into lengths

160g broccoli florets, cut into bite-sized pieces

225g lean fat-trimmed fillet steak

Method

STEP 1

Tip the rice mix into a bowl and stir in the ginger, chopped onion greens and 4 tbsp water. Add the broccoli and the spring onion whites, but keep the onions together, on top, as you will need them in the next step. Cover with cling film, pierce with the tip of a knife and microwave for 5 mins.

STEP 2

Meanwhile heat a non-stick frying pan and sear the steak for 2 mins each side, then set aside. Take the onion whites from the bowl and add to the pan so they char a little in the meat juices while the steak rests.

STEP 3

Tip the rice mixture into 2 large packed lunch pots. Slice the steak, pile the charred onions on top and seal until you’re ready to eat (see tip below).

Egyptian egg salad

Ingredients

2 large eggs

1 lemon , juiced

1 tbsp tahini

1 tbsp rapeseed oil

1 red onion , chopped

3 large garlic cloves , finely chopped

1 tsp ground cumin

½ tsp cumin seeds

400g can borlotti or fava beans , juice reserved

2 Little Gem lettuces cut into wedges

2 tomatoes , cut into wedges

sprinkling of dried chilli flakes and roughly chopped flat-leaf parsley, optional

Method

STEP 1

Bring a pan of water to the boil, lower in the eggs and boil for 8 mins. Drain and run under the cold tap to cool them a little, then peel and halve. Meanwhile, mix 1 tbsp lemon juice and 3 tbsp water with the tahini to make a dressing.

STEP 2

Heat the oil and fry the onion and garlic for 5 mins to soften them. Add the ground cumin and seeds, stir briefly then add the beans and lightly crush some of them as you heat them, adding some of the juice from the can to get a nice creamy consistency but keeping whole beans, too. Taste and add lemon juice and just a little seasoning if you need to.

STEP 3

Spoon the beans on to plates with the lettuce, then add the eggs and tomatoes, with the tahini dressing, chilli and parsley, if using.

Omelette pancakes with tomato & pepper sauce

Ingredients

4 large eggs

handful basil leaves

For the sauce

2 tsp rapeseed oil , plus a little extra for the pancakes

1 yellow pepper , quartered, deseeded and thinly sliced

2 garlic cloves , thinly sliced

1 tbsp cider vinegar

400g can chopped tomatoes

wholemeal bread or salad leaves, to serve

Method

STEP 1

First make the sauce. Heat the oil in a large frying pan, and fry the pepper and garlic for 5 mins to soften them. Spoon in the cider vinegar and allow to sizzle away. Tip in the tomatoes, then measure in a third of a can of water. Cover and leave to simmer for 10-15 mins until the peppers are tender and the sauce is thick.

STEP 2

Meanwhile, make the pancakes. Beat 1 egg with 1 tsp water and seasoning, then heat a small non-stick frying pan with a tiny amount of oil. Add the egg mixture and cook for 1-2 mins until set into a thin pancake. Lift onto a plate, cover with foil and repeat with the other eggs. Roll up onto warm plates, spoon over the sauce and scatter with the basil. Serve with bread or a salad on the side.

Healthy pancakes

Ingredients

50g self-raising flour

50g wholemeal or wholegrain flour

2 small eggs, separated

150ml skimmed milk

berries and low-fat yogurt or fromage frais to serve

Method

STEP 1

Sift the flours into a bowl or wide jug and tip any bits in the sieve back into the bowl. Add the egg yolks and a splash of milk then stir to a thick paste. Add the remaining milk a little at a time so you don’t make lumps in the batter.

STEP 2

Whisk the egg whites until they stand up in stiff peaks, then fold them carefully into the batter – try not to squash out all the air.

STEP 3

Heat a non-stick pan over a medium heat and pour in enough batter to make a pancake about 10 cm across. Cook for just under a minute until bubbles begin to pop on the surface and the edges are looking a little dry. Carefully turn the pancake over. If it is a bit wet on top, it may squirt out a little batter as you do so. In that case, leave it on the other side a little longer. Keep warm while you make the remaining pancakes. Serve with your favourite healthy toppings.

Pasta e fagioli

Ingredients

200g dried borlotti or cannellini beans , soaked for 6-8 hours

2 onions , cut into 1cm chunks

2 medium carrots , cut into 1cm chunks

3 celery stalks, cut into 1cm chunks

2 tbsp extra virgin olive oil , plus extra to serve (optional)

4 garlic cloves , crushed

1 litre fresh vegetable stock

400g can plum tomatoes

2 tbsp brown rice miso

6 rosemary sprigs

4 bay leaves

150g ditaloni rigati or other small pasta shapes

200g cavolo nero , stalks finely chopped and leaves torn

30g vegan parmesan , grated, to serve (optional)

Method

STEP 1

Drain the beans and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the onions, carrots and celery.

STEP 2

Stir in the olive oil, garlic, stock, tomatoes, half a can of water and the miso. Tie the herbs together with kitchen string and add these as well. Season. Cover and cook on low for 6-8 hrs, until the beans are cooked through and all of the veg is really tender.

STEP 3

Remove and discard the herbs and stir in the pasta. Cover and cook on high for another 30 mins. Add the cavolo nero stalks and leaves and cook for a final 30-40 mins, or until the pasta is cooked through and the greens are tender. Serve scattered with the cheese and drizzled with a little more olive oil, if you like.
